Ingredients

  • 1 lb breakfast sausage Mild or spicy depending on your taste. Cooked and crumbled.
  • 6 large eggs These bind everything together while adding protein and richness.
  • 2 cups shredded cheddar cheese Sharp cheddar works best for bold, cheesy flavor.
  • 3 cups frozen hash browns Thawed; they create that hearty comforting base layer.
  • 1/2 cup milk Helps the eggs set nicely and adds creaminess.
  • 1/2 cup sour cream For a rich texture and a subtle tang.
  • 6 strips cooked bacon – Crumbled for crispy smoky bites throughout.
  • 1/2 tsp garlic powder A little kick of flavor that wakes up the whole dish.
  • 1/2 tsp onion powder Balances the richness with a hint of savory depth.
  • Salt and black pepper to taste

Instructions

Step 1: Prep Your Ingredients

  • Start by preheating your oven to 350°F (175°C).
  • Cook the breakfast sausage in a skillet over medium heat until browned and fully cooked. Drain any excess fat.
  • Cook the bacon until crispy, then crumble it into bite-sized pieces.
  • Thaw the frozen hash browns so they’re ready to layer in the casserole.

Step 2: Mix the Egg Base

  • In a large bowl, whisk together the eggs, milk, sour cream, garlic powder, onion powder, salt, and black pepper. This mixture will create that creamy, fluffy texture that makes the casserole irresistible.

Step 3: Assemble the Layers

  • Spray a 9x13-inch baking dish with nonstick cooking spray.
  • Spread the thawed hash browns evenly on the bottom of the dish.
  • Sprinkle the cooked sausage and crumbled bacon evenly over the hash browns.
  • Pour half of the egg mixture over the layers.
  • Add a generous layer of shredded cheddar cheese.
  • Repeat the layers by pouring the remaining egg mixture on top and finishing with another sprinkle of cheese.

Step 4: Bake to Perfection

  • Place the casserole in the preheated oven and bake for about 45-50 minutes, or until the eggs are set and the top is golden brown.
  • To check doneness, insert a knife or toothpick into the center—if it comes out clean, it’s ready!

Step 5: Let It Rest and Serve

  • Once out of the oven, let the casserole rest for 5-10 minutes. This helps everything settle and makes it easier to cut.
  • Slice into squares and serve warm, maybe with a side of fresh fruit or your favorite morning beverage.
